It's fun to say. They're fun to make. And, thanks to the chocolate, butterscotch and peanut butter, they're even more fun to eat.
I never really liked Rice Krispies treats (as an adult). Then There ccame a time when we didn't have any margarine, just butter. I was hooked!!! Then a friend brought over some scotcharoos and well...The rest is still a great love for rice krispies made as scotcheroos.

1. My recipe for Scotcheroos is a very old magazine clipping, and it calls for 1 10oz. bag of regular or mini marshmallows instead of the corn syrup and sugar. The 6 cups of Rice Krispies is replaced with 5 cups of cereal, and 1 cup of peanuts; I usually use low salt dry roasted. I've used both semi sweet chocolate and milk chocolate morsels with great results. I take these to potlucks and parties whenever I don't have time to bake, or when it's too hot to turn the oven on. They always disappear quickly!

2. I made the Scotcheroos before and somr people thought that the butterscotch made it to Rich and sweet. Last night made them and instead of the 1 cu pbuttercotch morsels I replaced it with 1 cup of peanut Butter Chips. And it was a bigger hit. Just thought I would share that If you don't like Buttercotch replace with peanut butter!

3. Because the Scotcheroos use corn syrup, sweetened chocolate, sweetened butterscotch, and sweetened peanutbutter, I tried cutting the sugar to 1/2 cup. It was still extremely sweet. I cut the sugar out altogether the last time and this treat is still extrememly (deliciously) sweet. The cup of sugar is excess and not needed.

4. Our family loves these, once when out of corn syrup we tried melting the peanut butter and butterscotch chips and mixing those with the cereal. They were great!!

6. I have been making these for about 30 years. The recipe I use which is called 'O Henry Bars' calls for 1 1/2 cups of peanut butter instead of just 1 cup. This makes the bars more moist. I also use 1 1/2 cups of chocolate chips (I alternate between using milk chocolate and semi sweet) and 1 cup of butterscotch chips. My original recipe also called for more butterscotch chips than chocolate chips, but my family likes it better with more chocolate. We have decorated these for almost every holiday with sprinkles and have even cut them out into shapes with cookie cutters also. This is probably the most requested treat recipe by my kids, two of whom are now in college.

7. Our family has always used milk chocolate chips instead of semi sweet when making scotcharoos. They are very popular at family gatherings.

10. This is something my mom always made for me on Christmas but, I couldn't find te recpe on here. It's rice krispie treats with peppermint candies in it..You crush up the candies really small and add then when you melted the marshmallows and add the cereal. It's divine..

12. These are a favorite childhood memory from the late 60's and early 70's. Seems like the original recipe had the chocolate layer sandwiched between the cereal mix, rather than topping it. That's the way I remember it, so that's the way I'm going to try it!

13. When I make them I do the chocolate/butterscotch a bit different. After you have spread the rice krispies in the pan; sprinkle a mixture of the semi-sweet chocolate chips and the butterscotch chips over the top. Put in the oven on a low temp. until the chips are super glossy. Take out and very gently smear/spread a spoon over swirling the melting chips over the rice krispies. It tastes amazing and looks great too!

14. These were a huge hit, but a little on the crunchy side. This recipe is also great with the original Rice Krispie recipe with peanut stirred in.

15. I got tired of trying to cut through the gooey goodness, so I started making these in mini muffin tins! Press the cereal mixture into the cups (no paper liners, obviously). To put on the chocolate topping, spoon it into a zip-top bag, snip off the tip of one corner, and pipe it on like you're decorating a cake! Easy-peasy!

20. Is this similar to the recipe from the early 1970's? I didn't use corn syrup either. I remember making them all the time. I think I mixed the butterscotch and peanut butter with the rice krispies and then put the chocolate on top. I would LOVE to have that recipe. Reminds me of my youth.

22. I have been making these for about 30 years, except I have always used Special K. I've tried them with the Rice Krispies, but I think they're more filling with the Special K.

23. My mother in law has made these for years and they are an addictive family favorite. They are neither low fat or low in sugar but try and stop eating them after you start! Bring them to a gathering to be the instant star of the show.
