  • 1 container (6 oz.)   low-fat raspberry, lemon, orange or vanilla yogurt
  • 1/4 teaspoon   vanilla
  • 1/4 cup   frozen reduced-fat non-dairy whipped topping, thawed
  • 1/3 cup   Kellogg'sĀ® Cocoa KrispiesĀ® cereal
  • 1 tablespoon   flaked coconut, toasted
  • 1 cup   fresh raspberries, sliced strawberries or cut-up mango

1. In small bowl stir together yogurt and vanilla. Fold in whipped topping. In another small bowl stir together KELLOGG’S COCOA KRISPIES cereal and coconut. Set aside.

2. In two parfait glasses or dessert dishes alternate layers of yogurt mixture, raspberries and cereal mixture.

My son has never been one for ice cream, chocolate or candy. He has always loved Rice Kirspy Treats though. After many years of making my peanut butter version of this tasty treat, my son moved away to college. A month passed by and I often offered to bake him cookies or some other tempting treat. He finally asked me one day "You know, Mom, all I would really love to have is some of those delicious Rice Krispy Treats you used to make. Well, I made a double-batch and took them to him the next weekend. You would think he had won the lottery. When I asked him if he was going to share them with his roommates, his reply was "if they're lucky" I might offer them one. It's nice to know that after 18 years he still loves them.
